Il Rio Falcone
A wine born from the noblest selections of Refosco dal Peduncolo Rosso 70% and 30% Pinot Nero grapes that are vinified together only in the best vintages.
No. of bottles produced: 1,300 bottles of 0,75 l. (It is produced only in optimal vintages for the phenolic ripeness of the grapes)
Position: 180-350 mt. s.l.m., marly-arenaceous hilly terrain.
Yield per log: Refosco dal peduncolo rosso 1 kg./ceppo, Pinot nero 0,5 / 1kg./ log.
Collection mode: manual, in boxes.
Vinification: after drying for 30/40 days, the grapes are crushed and left to ferment in large oak vats with indigenous yeasts at a natural temperature for about 20 days. Frequent pumpovers guarantee the extraction of the color and start the malolactic fermentation.
Ageing: 20 months in oak barrels. The wine, with frequent decanting is brought to limpidity and then put, without any filtration or clarification, in the bottle, where it continues the refinement for another 6 months before the sale.
Color: intense ruby red.
Aroma: complex aroma, with hints of ripe red fruit with a slight spicy note that is embellished with a thousand nuances as a result of aging in wood.
Taste: full, enveloping tannins.
Pairings: perfect with grilled meats, game, spicy salami.
Serving temperature: 20 °C.
